The best and only way to know how clean your food is… is to make it yourself. 

Listen. You don’t have to be Martha Stewart or Chef Boyardee (wait, please don’t be Chef Boyardee)…. but you do need to know how to cook a simple and healthy meal for yourself.

Cooking is a basic life skill. It’s relaxing, healthy and even saves you money💰!

Since WWI (100 years ago, wow) processed foods began with the need to feed our soldiers overseas and those at home with food that wouldn’t spoil and took little or no preparation.

People saw how convenient these products were and now, decades later, we’re seeing the terrible toll it has taken on our health.

Many food preservatives, sweeteners, dyes, flavor enhancers (aka chemicals) are affecting our health through weight gain, heart conditions, autoimmune conditions, cancers, brain degeneration and even ADD, ADHD, depression and anxiety! 

It’s time to go back to basics and eat food- REAL FOOD aka Simply Seasonal

Vegetable Curry

  • Servings: 4-6

Onions, carrots, garlic, ginger, sweet potato are all easy to store for a long time in the pantry. Along with your spice cabinet this recipe is ready to go at any time! Of course, add in, substitute or omit any veggies as well. Simple Tip: “Always cook with Seasonal foods to balance, heal, and thrive!” xoxo Cara + Megan

Ingredients

  • 2 Tbl ghee, butter, or coconut oil divided
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 inch ginger, minced
  • 1 sweet potato, diced small
  • 1 head cauliflower, cut
  • 2 carrots, sliced
  • sea salt + pepper
  • 1/4 tsp fennel seeds, 1 tsp cumin, 1 tsp turmeric, 1/2 tsp ginger, 1/2 tsp cardomom (or 1 1/2 tbs favorite curry powder blend)
  • 1 can diced tomatoes
  • 1 cup broth or water
  • 4 cups spinach
  • cilantro and/or Thai basil

Directions

  1. In large sauté pan, heat 1 Tbl ghee over medium high heat. Add onion and cook until translucent about 3-5 min.
  2. Stir in garlic and ginger, cook 2-3 min.
  3. Add Sweet potato, cauliflower and carrots. Season with salt + pepper.
  4. Add all spices and 1 Tbl ghee and incorporate well to veggie mixture. Pour in broth and deglaze pan.
  5. Turn heat to low. Cover pan and cook for 20 minutes until vegetables are soft.
  6. Stir in spinach until wilted.
  7. Serve over rice, garnish with cilantro and basil and Enjoy!
