Herb Crusted Salmon

  • Servings: 2-4
  • Difficulty: easy

Ingredients

  • 2 lbs. wild caught or sustainably farmed salmon
  • 6 cloves garlic
  • 1 tsp sea salt
  • 6 sprigs fresh thyme, stems removed
  • 3 sprigs fresh rosemary, stems removed
  • zest of 2 lemons
  • 1 Tbl Olive oil

Directions

  1. Preheat oven to 400. Place salmon on a baking sheet lined with parchment (to make clean up easier).
  2. On a cutting board, sprinkle garlic with salt and mince.The salt will break down the garlic, making more into a paste.
  3. Begin to incorporate the herbs, lemon zest, salt and olive oil. Mincing all into a rub or paste.
  4. Spread the paste evenly onto the salmon.
  5. Bake at 400 for 20 minutes.
  6. Serving suggestion: with brown rice and your favorite green vegetable. Enjoy!
