Recipe: Summer Panzanella
The modern American supermarket can be overwhelming with everything available all year long.
It’s created such a disconnect between us and what’s in season- so how do we know what to eat?! π€·π»ββοΈ
The best way is by visiting your local farmer’s market or joining a CSA to know what’s in season. Go see what’s growing around you π₯… meet your farmers π©βπΎ… and eat your local dirt π!
Say what?????
Yup, a little dirt won’t hurt… in fact it will help you grow a super healthy microbiome!
Consuming vegetables and fruits grown in organic soil close to your home feeds your microbiome with the microorganisms (probiotics) needed specifically for this time of year!
How cool is that?! π€
So not only are you meeting and supporting some really cool peeps (thank you organic farmers π), you’re also purchasing the healthiest foods you can possibly give your body at this time of year!
Still questioning if going organic is worth it? π°
Over the last 50+ years, the amount of chemicals used on our food has exploded. So has asthma, allergies, digestive issues, autoimmune diseases and cancer.
Coincidence? π€
We prefer our food not drenched in poisonous chemicals. Farmers wear hazmat suits and masks while spraying these chemicals in greenhouses… and we’re suppose to eat that!?
Plus, these herbicides, fertilizers and pesticides DO NOT WASH OFF! Why would they bother using them if rain would just wash them off?
We get enough toxins in our life, so choosing organic is a way to take control and lower our toxic load.
Invest your money in a local and organic lifestyle now to save your money on medical bills later!

Summer Panzanella

Ingredients
- 1 stale baguette or artisanal loaf, diced in 1 inch cubes
- 3 heirloom tomatoes, sliced in wedges
- 3 peaches, sliced into wedges
- 1/4 red onion, thinly sliced
- 3 tbs favorite vinegar (balsamic, white balsamic, red wine vin, or ACV)
- 1/4 cup extra virgin olive oil
- 1/4 tsp sea salt
- 1 burrata or your favorite farm cheese, diced
- 1 bunch basil, chopped
Directions
- With a serrated knife, carefully cube the stale bread and place in a large bowl.
- Add the sliced tomatoes, peaches, onions, vinegar, olive oil, and salt. Give the salad a toss to start incorporating the dressing and juices into the bread.
- Gently add the burrata and basil and give the salad one final toss. Let the salad sit for 1-2hrs before serving so the bread rehydrates and absorbs all the flavors. Serve and enjoy!
