Recipe: Coconut Creamed Kale
Beauty is absolutely more than skin deep, 👸 way deeper…
Taking care of your skin is an inside job.
But at the surface, the skin gives us clues to what’s happening inside the body. Allergies, inflammation, toxicity and emotional stress will all show themselves through the skin.
We can even look at the location of the skin condition to determine the root cause (using Chinese Meridians as they do in acupuncture).
In the fall (and winter) our skin could use some extra care.
The temperature drops, light diminishes, the wind picks up and energy draws in.
As a maple tree draws its’ sap to the trunk, it allows the leaves to dry, shed and fall to the ground 🍂.
The same thing happens within us; energy and blood pulls inward to warm the center of the body, reducing circulation to the hands and feet- leaving our skin dryer.
In the summer, we talked about skin protection from the sun and the importance of hydration 💦.
In the fall, hydration comes in a different form; it’s deeper, more penetrating, mucilaginous and oily.
Yes, we still need water, but we need cooked seasonal veggies, oils and foods rich in Omega 3s which will add deep hydration to the skin.
Other nutrients vital to healthy skin are Vit. C, collagen, and retinol.
Vitamin C not only boosts the immune system, but also gives our body the building blocks to produce collagen!
And beta carotene from yellow and orange seasonal foods 🎃 build retinol for the skin!
So as you can see, seasonal foods give us everything we need during this time of year!
No need to spend money on expensive supplements and skin creams when we can nourish our skin through everything the earth provides!

Coconut Creamed Kale
Ingredients
- 1 cup raw cashews, soaked 20 min in warm water
- 1 can coconut milk
- 2 Tbl coconut oil
- 1 onion sliced
- 2-3 cloves garlic, minced
- 1/2″ ginger root, minced
- 1 bunch kale, destemmed and chopped
- 1 tsp sea salt
- 1 tsp or more Sambal chili sauce, per desired taste
Directions
- In a blender, blend cashews and coconut milk. Set aside
- In large sauté pan, heat oil over med high heat
- Sauté onion 5-7 min until translucent. Stirring occasionally and season with pinch of salt.
- Add garlic and ginger. Stir to incorporate 1 minute.
- Add kale and salt again
- Pour cashew coconut sauce over the kale mixture and let simmer about 15-20 minutes. Add water (or broth) if more liquid is needed or desired.
- Stir in chili sauce
- *Optional: Once simmering add shrimp, fish, chicken or chopped sweet potato and simmer until cooked through.
- serve over rice
