Episode 21: Celery Juice Pros + Cons

Celery is a tried and true ingredient that goes into EVERYTHING!

It’s part of 👩🏻‍🍳 the French Mirepoix(celery, onion, carrot)👨🏻‍🍳 the Cajun Trinity (celery, onion, green pepper) and 👩🏽‍🍳 the Italian Sofrito (celery, onion, carrot, garlic, parsley).

It also plays a key role in our favorite protein based salads like 🐔chicken salad, 🐟 tuna salad and 🥚 egg salad.

But today… the spotlight is finally on Celery! 👏👏👏

You’ve probably heard about this celery juice trend sweeping the nation thanks to Anthony William, the “Medical Medium”. He’s been making some big claims on the healing powers of celery.

And much of it is very true especially if you deal with inflammation, dehydration and even ACID REFLUX but…

So is kale, cabbage, radishes, spinach, bok choy… because… they’re all healing and they’re ALL “superfoods”! 

But the thing we love about these food trends, is that people are finally appreciating the healing powers of ALL veggies!

Celery Caesar Salad

  • Servings: 2-4
  • Difficulty: easy
  • Print

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 tsp each of dried rosemary, garlic powder, oregano, sage
  • drizzle of olive oil
  • 1 full head of celery, sliced in diagonals, leaves reserved for topping
  • 2 cloves garlic, minced
  • 2 tsp dijon mustard
  • juice of 1 lemon
  • 1-1/2 tsp anchovy paste
  • 3 tbl avocado oil
  • 1 tbl grated parmesan
  • 10-12, 2 inch shavings of parmesan with peeler
  • Directions

    1. Prepare chickpeas for oven by coating with the herbs plus salt and pepper and drizzle with olive oil
    2. Place on baking sheet and roast in oven at 425 for about 20 minutes, until crunchy
    3. Meanwhile, prepare the dressing by whisking together in a small bowl, garlic, dijon mustard, lemon, anchovy paste, avocado oil and parmesan. Season with salt and pepper.
    4. Toss the dressing with the celery and top with roasted chickpeas, celery leaves and shaved parmesan.

  1. YES!!!! Thank you for talking about stomach acid. People need to hear it more! When suffering from gastric reflux It is not because we have ” too much acid”! It is actually the contrary, we don’t have enough and that’s why it is coming back up! The food is sitting in the stomach and cannot be broken down fast enough so it ferments and causes the reflux. Also celery is rich in magnesium and it helps relax the esophageal sphincter which is also responsible for the reflux. People use antacid and proton pump inhibitors as if they were napkins! Yeah, I am gone have an entire pizza with pepperoni but let me take my Zantac so I won’t get the heart burn, instead of listening to their body sending them message that something is not right and they should do something about it. Teaching eating hygiene is also important! Thank you Megan & Cara!

  2. I’ve been wondering about this new trend. Thanks for shedding light on celery juice. Question I’ve been pondering now that I’ve moved to Alaska and don’t have access to as much seasonal produce – if I can’t buy organic, is it better to eat non-organic vs passing on that veggie? Someone recently told me it’s better to get the full array of veggies – not to dismiss an emphasis on getting organic when you can…but conventional veggies are better than not at all. Wondering your thoughts on this as you mention buying organic in many episodes.
